Gluten Free Almond Muffins

Makes 12. You will be surprised how quick and easy these are. (gluten free)

•  ¾ cup GF self raising flour, sifted
•  ¼ cup almond meal
•  1¼ cup thickened cream, not whipped
•  3 tbs. sugar

Combine all ingredients and mix well. Pour into greased mini-muffin tray. Bake 20 minutes at 180°C or until golden brown.

Optional: 
Add fresh blueberries or raspberries or whatever fruit you have to the mix.
