Fancy Lemon Sandwich Cookies
(eggs, fish, milk, peanuts, shellfish, soy, tree nuts and wheat free)

Ingredients
1 cup margarine or shortening
2 cups white sugar
1/2 cup lemon juice
5 cups oat flour
1 tsp. baking soda
1 tsp. salt

Beat margarine of shortening and add sugar. Add lemon juice and mix well. Mix in oat flour, baking soda, and salt. Shape small balls of cookie dough. Balls should be the same size. Bake at 350 F for 12 minutes. While cookies are cooling, make frosting.

Frosting
1/4 cup margarine or shortening
1 1/2 cups powdered sugar
2 tbsp. lemon juice
3 tsp. lemon zest

Beat margarine of shortening. Add 1/2 of the powdered sugar. Add lemon juice and lemon zest. Mix in remaining powdered sugar.

When cookies are completely cool, spread frosting on one cookie and top with a second cookie. Repeat until all cookies are made into sandwiches. Frost remaining cookie with remaining frosting and be the taste tester.
